There are so many yummy looking/sounding recipes on Pinterest and I find tons that I'd love to try. So, I'm going to start trying some of them.
I recently made this recipe for Chicken & Cheese Lasagna Roll-Ups. It looks so good to me but ultimately it was kind of a bust.
This recipe was on the easy side. You cook the chicken ahead of time and mix it up with various cheese and a little milk. Then you spoon some of the mixture onto a cooked lasagna noodle and roll it up and bake it in the oven. You pour spaghetti sauce over it before you bake it but it still turns out pretty dry. The cheese just didn't really melt and so the roll ups were pretty dry. That was our main complaint with this dish, it just wasn't amazing.
So, there ya have it, maybe you can improve upon this recipe but I don't think I'll make it again as is.

Yummy Taco Soup - Getcha Some
I've had a few friends ask for my recipe for taco soup. This is one of our favorite meals. For Curtis - because it's yummy. For me - because it's easy. . . oh and also yummy.
Ingredients:
1 lb ground turkey meat or hamburger meat
1 can chicken broth
1 can rotel tomatoes
1 can kernel corn
1 can pinto beans
1 packet of ranch dressing mix
1 packet of taco seasoning
Directions:
- brown meat in large pot
- stir in all other ingredients and bring to a boil
- Enjoy!
I sometimes add garlic or other seasonings if I'm feeling more 'spicy'. I serve mine over rice (because everything in my house is served with rice) and I put shredded cheese on top.
Give it a whirl and let me know what you think!

Great Nanny's Dirty Rice
My great grandmother "Great Nanny" was born in Louisiana and passed along all of her Cajun recipes to our family such as gumbo, etouffee, and dirty rice. Her dirty rice is my absolute FAVORITE side dish that was served at Thanksgiving and Christmas. I was discussing recipes with some friends over the weekend and they wanted to try this awesome dirty rice I was describing. So here's the recipe.
Ingredients:
1 lb sausage or hamburger meat
2 cans beef broth
2 beef bullion cubes
2 cups water
2 cups rice
Kitchen bouquet (to taste) (I will explain this later)
Onion, celery and bell pepper (to taste)
Directions:
Cut up or dice as much onion, celery and bell pepper as you'd like. I always have these cut up in bags in my freezer. That way I can just throw some in the pan and saute them until defrosted and cooked. I cut larger pieces (instead of dice) because I prefer not to actually eat the onion and bell pepper but you need the flavor!
Then brown your hamburger meat in the same pot. Once this is done, add all the other ingredients. It will be very watery but it will cook into something like a rice casserole. Bring all these ingredients to a boil, reduce the heat to low, cover the pot and cook for 15 minutes or until the liquid is soaked into the rice.
So Kitchen Bouquet is a seasoning / coloring. It's a little hard to find in the store, you may have to ask but it is worth it. I use it in my gumbo, roast, or anything beef based. It's meant to add coloring but it has a flavor that is definitely missed if you don't have it. I recommend getting it.
I'll also add some Tony Chachere or cayenne pepper to add some spice to it.
I love this recipe because it takes one pot, takes about 30 minutes or less and it includes meat, starch and vegetables all in the same dish. We always had it as a side dish in our family but I use it as a main dish around my house. If I was cooking this today I'd post a pic but I think we're having lasagna tonight. :)

How About Them Muffins!

So, I found this blog through my friends blog and although I don't know this girl, her recipes sound very delicious. ESPECIALLY this banana chocolate chip muffin recipe. I wanted to share this with you, I plan on trying it very soon. I'll let you know how it turns out.

Learn how to make these before you have children. Seriously. These are so good. And they aren’t labor intensive so even us non-bakers can handle it. Give it a go and let me know what you think.
1 c. sugar
1/2 c. butter, softened
1 T. water
2 eggs
3 crushed bananas (works best when they are old)
2 c. flour1 t. baking soda
1-1.5 c. chocolate chips
Preheat your oven to 350. Cream butter, sugar, and water until smooth. Add eggs and beat well. Mix the mashed bananas. Then mix in flour and baking soda. Stir in chocolate chips. Easy as pie! Well, easy as muffins… Ha. I’m hilarious. Put into greased muffin tins and bake for 15-18 minutes.
